Born and raised in Mexico City, Chef Marco Antonio Chávez Jaime brings over 20 years of international culinary experience across Mexico, Spain, France, China and Thailand. As Cluster Chef de Cuisine at Madison, Anantara Siam Bangkok Hotel’s refined steakhouse, he leads the culinary team with a focus on quality, consistency and innovation. Drawing on his experience in some of the world’s most demanding kitchens, including nearly a decade working alongside three-Michelin-starred Chef Paul Pairet in Shanghai, Chef Marco combines classical technique with global influences to create refined and approachable steakhouse cuisine.
